I was brought up not to waste food and it actually physically hurts me to throw away left-overs. In my opinion frittatas are one of the best ways to use yesterday’s food.

This particular day I had some Bean Sprout Bolognese, eggs and a sad little end of a chili fruit in the fridge. I set the oven to maximum temperature, poured some nice olive oil in a cupcake tray and put that in the oven. Then I chopped up the chili and mixed it with the bean sprouts, beat the eggs and mixed it all together.

When the oil was sizzling hot I poured the egg mix into three cavaties and cooked it for some 8 minutes until golden brown. Quick, easy and beautifully proteinacious.
